At A Stand Still

Do you ever have moments when you feel like life is moving so fast that you wish you could just stand still for five minutes?

That's me this week.

Jason and I got home last night around 9:30 and I walked into an apartment that was screaming transition. My roommate had been moving all of her stuff out over the weekend, we have a couple of Jason's things stored in the dining area, and our fridge was completely empty.

By next Friday (June 8th), Jason will be living in his summer residence, I'll have my 3rd roommate while living at this apartment, one of my sisters will be a high school graduate, and I'll be a couple weeks closer to the wedding.

I was planning on doing some sort of "where do I go from here" update. If you've been reading for a while, you'll know that I did a cleanse about a month ago and I've been trying to live a healthier lifestyle ever since. Unfortunately, I've decided to put that off until next week. This week will be filled with lots of eating out and less working out. Transition makes it hard to be healthy, but I'm trying to do my best.

Needless to say, look for the update next week.

Jason and I will be heading back down to Destin this weekend for my sister's graduation. I can't wait to see her walk across the stage!

In the meantime, be praying for this time of transition. I know that I'm not the only one who feels like it'd be nice to stand still for just a few minutes. So as we begin this week (a little late), I hope that any of you in the middle of transition will be encouraged knowing that you're not the only one.

'Tis the Season

Well, today marks the beginning of summertime in the South.

Growing up, Memorial Day marked the beginning of "the season" for everyone I knew. When you live in Destin, or any coastal town, Memorial Day marks the beginning of a three month long Black Friday.

So...in honor of my hometown and - well - we'll call it "heritage," here's my "Top 10 Summertime Favs"

10 - Less Traffic in the mornings

As much as I absolutely loved growing up in Destin, I do not miss the summer traffic at all. Although I appreciated it, because I knew that it meant that people were supporting our economy, I have to say that sitting in traffic for hours a time just to get to work, the beach, the mall, or to a friend's house was not ideal. In Birmingham, summertime means less traffic. School is out and everyone goes to...well...Destin. Although my family may get annoyed at the hundreds of Alabama, Mississippi, Georgia, and Tennessee tags that they pass (or rather sit in traffic with) on the way to work, it means that I get to leave for work five minutes later than usual.


9 - Baseball

I don't get as much into the sport as I do into the atmosphere. I love all kinds of baseball in the summer - from tee ball to pro ball. I grew up going to the occasional Braves game with my family and during high school, I was privileged to get to see a couple different really cool games around the country. Don't get me wrong, I'm all about the big leagues, but I also love going down to the ball park and just watching the kiddos play. Obviously, Jason and I don't get to do that because we don't have kiddos (or even really know any up here), but those are definitely some of my favorite memories from growing up.

Jason and I went to a Braves game last summer and it was really a blast. We're trying to plan a fun little trip back to Atlanta this summer to and go to a game.

I'm a sucker for anything outdoors. I love concerts, movies, food, picnics, markets, garage sales, plays, and truly anything that consists of sitting outside in the warm air with a cool breeze.

Again, growing up in Destin, I feel like I've been conditioned for outdoor events since birth. My parents would always take up to events out at Seaside or Baytowne Wharf. It's kind of fun to get to do things that tourists do and then go home and sleep in your own bed at night.

Birmingham has fun things to do outdoors in the summer as well. I'm just learning about them as we go along. I guess that's part of the transition from living in Destin (either full-time or even just in the summertime) and living in Birmingham full-time. Jason and I enjoy outdoor activities, so if you hear of one nearby, let me know...we'll be there with shorts on!

7- Pool time
I didn't know this until I permanently moved to Birmingham last year, but most pools apparently don't open until Memorial Day weekend...or may a week or two before. I'm a big fan of clean pools. I love being able to lounge on a raft (like our friend Mr. Speedo Man) or lay out for a little while and then jump into a refreshingly cool pool.

6 - Weekend getaways

You're probably tired of hearing me say, "Growing up..."

But, growing up, my family and I would sometimes go stay on the beach for a weekend or some short amount of time. We knew a lot of people who would come to town or who owned houses/condos on the beach. Occasionally, we'd go stay out there. I loved doing that because I still got to hang out with my friends and go about my normal routine, but when I wanted to feel like I was on vacation, I could.

Jason and I have a lot of little weekend getaways planned this summer. Starting this weekend, we're in Birmingham very little over the summer. I cannot wait for those Friday afternoons (and some Thursdays) when we get to jump in the car, turn on some good music, and drive out of town.

5 - New movies

There are not many things that can top the opening weekend of a movie you've been waiting to see for months. Many times, new movies that we've all been waiting for happen to open during the summer.

4 - Sales

Summertime caterers quite specifically to the shopoholic. Now, I'm not sure that I fit quite into that category (especially since I've been "on my own"), but I do love a good sale. Lucky for girls like me, summertime also brings with it lots and lots of sales.

3 - Vacation days

Oh the joys of vacation days. I've learned very quickly that there are vacation days and then there are vacation days.

Vacation days are days that you're actually on vacation. Most of us go on a summer vacation every year or so, and vacation days laying out by the pool, laying on the beach, nice dinners out, shopping, and sight seeing are familiar to us.

Vacation days are days that you don't work, but you're not on a vacation. These are used for days when you don't go to work because you've got things to do (yucky errands) that can only be done between the hours of 8:00 a.m. and 5:00 p.m. Monday through Friday.

So far this year, I've only taken vacation days. I'm so excited about getting to take vacation days this summer!

2 - Wedding season

Summer is the seasons of weddings. This year there are quite a few that Jason and I will be attending as well as few that we can't make it to. Summer weddings have always been part of my life. If you've been on the beach in Destin/Pensacola/Panama City on a Friday, Saturday, or Sunday evening I'm sure you've seen a wedding ceremony.

I'm sincerely excited for all of my friends getting married this summer (and next) and I can't wait to become a married woman myself.

1 - No school

Unfortunately, this one only applies to my life indirectly these days. I was always a huge fan of summer vacation. One year I heard rumors about how our county (or state?) might be going to year-round school and I cried...literally...sat down and cried.

Now, I'm no longer in school, but summer means that my family is way more available for me to hang out with them! Having two sisters in school, a mom who teaches, and a dad who is a principal has made me feel a weeeee bit left out this year :( Luckily, now that they're all going to be on summer vacation, I get LOTS of family time!

Loose Ends

Whenever I finish something that I've started, I always feel really good about myself. I feel accomplished. I feel productive.

On the flip-side of that, whenever I have things that are left undone, I feel like a have this thing hanging over me and staring me in the face. I have to finish it. I have to be done. I can't stand loose ends.

Well, last night I finally finished the book Calm My Anxious Heart by Linda Dillow. As I laid in bed trying to go to sleep, I felt accomplished and productive. I felt like I'd done something good and deserved a pat on the back, even if it was just from myself. Then I rolled over and looked at my bookshelves full of books that I've started and never finished, or purchased and never looked at after my credit card was swiped. Now I know what I'll be doing this summer!

I definitely recommend Linda's book to - well anyone. It is scripture based and it thoroughly covers so many of the insecurities and questions that we, as women tend to face almost daily. There is also a 12-week study guide in the back and I'm praying through whether or not I should put together some sort of book study to cover this material. It was so full of truth and overall, it was encouraging. So many times I find myself reading books like that and either realizing that they're not rooted in the Word or concluding that I feel more discouraged after I've finished reading.

Now onto a section of this post that I'd like to title: Please Pray for Jessica

Yesterday was a big day for me. It was an ordinary day, but it carried a lot of underlying things that are pretty big and tied up a lot of loose ends.

First, yesterday marked four months until Jason and I get married. When I looked at the clock and saw that it was 3:00 p.m. (which is the time that our ceremony will start), I wanted to get up and dance. Lucky for everyone in my wing at work, I did not.

Second, Jason and I (well, mostly I) were able to get everything prepared with our new washer and dryer. Since we bought them used, they needed to be cleaned up and we're actually selling the pedestals that they came with (if you're in the market for front loading washer and dryer pedestals, hit me up). I spent some time last night with Clorox in hand spraying down every inch of those suckers. They are now Jessica-sized (thanks to Jason and his mad un-bolting skills) and they are clean! Loose end tied.

As you can tell, I'm excited about hooking these puppies up. It's the first big purchase that Jason and I have made together, so I think it's fair that I'm this excited, right?

Next, I went to a general practitioner for the first time since I last saw my pediatrician (so roughly 5 years). Jason got his name from a friend of ours (thanks Lacey) and he went to see him last summer when he was struggling with his milk allergy. The doctor was wonderful and spent lots of time with Jason walking him through what steps they'd need to take for him to get better in time for the Fall tour. I read a lot of reviews about him online, and every single review said the same thing - he spends as much time as you  need in the room with you and he doesn't rush through the exam. I figured that establishing a family doctor in Birmingham was somewhat of another loose end that needed to be taken care of.

Well, he definitely lived up to his reputation. I really just wanted to get established with a doctor here, but I also haven't talked to a doctor about my insulin resistance since I was 17 or 18-years-old. A lot has changed since then in my life, my surroundings, and in my body.

He talked to me for a while and then he said that they were going to do some blood work. He asked me some questions about things that are symptoms of diabetes. I'd told him that I was getting married in September and he told me that it's really good that I came in because many of the things I had questions about, if left untreated, could lead to infertility down the road. Obviously, Jason and I are planning on adopting at least once in our lives, so infertility doesn't scare me as much as some, but I still don't want to have to deal with it. I'd like to be able to have biological kids too.

Then came the biggie - he put me on a diet plan. I wasn't offended or worried like I probably would have been a couple of yeas ago. I wanted him to do that. I wanted to know if I'm doing the right things, if I'm doing things wrong, and if I'm doing things that will be effective in creating a healthier lifestyle for myself.

As it turns out, I'm definitively on the right path. He told me to be exercising consistently and to aim to eat about 1,200 calories a day. He said that due to the insulin resistance, he's going to put me on a low carb/low fat diet. I'm allowed 120 grams of carbohydrates per day and about 32 grams of fat per day.

I plugged all of this new information into the myfitnesspal.com app that I have on my iPhone and went to get my blood work done.

Here's where I'm asking for prayer: my blood work.

I've had blood work done tons of times, but this is really the first time I've been worried about it. I'm 23-years-old and so far I haven't been able to lose weight eating a normal healthy diet and exercising pretty consistently. I have a history of diabetes in my family and I am at a higher risk for it because of the insulin resistance. I'm praying that my blood work has answers but that the results don't contain something wrong with me (aka diabetes). Please pray for self-control and determination with eating according to the doctor's rules as well as consistency in my exercising routine. Overall, pray that I would not forget for a second that God is in control regardless of my circumstances and this is a battle that he's already won.

Summer Nights - Looking Forward

Last night Jason and I had a great, normal night.

We both worked until 5:00.

I made dinner - pizza for him and feta turkey sliders for me.

We watched Person of Interest.

We went to the Apple Store to exchange something.

We went to Target to buy a wrench.

We went to our friends' townhouse to watch The Bachelorette.

We went home.

Jason went home.

Jason finished his washer/dryer project (for now at least).

I read.

I went to sleep.

The end.

Haha...just kidding. It's not the end. I of course have to give you at least a few pictures and a recipe. Duh...

I've been wanting an iPod Nano for a little while now. I had one that I used to run with, but around the time I got my first iPhone, my sister lost her iPod so I gave her mine. Then, last year, Jason bought me an iPod Shuffle to run with. I love it, but it doesn't hold a lot of music and I can't figure out how to select the music I want to listen to. Plus, I like the Nike+ app.

Lately, I've been using my iPhone to run because my shoes have the Nike+ sensor and I like to measure my distance, pace, etc. I'm not a fan of running with my phone though because I'm terrified of dropping it, I'm scared of sweating on it too much (that's one nasty form of liquid damage), and honestly, I hate holding it.

The solution to all of this: a new iPod Nano.

Yesterday I finally broke down and bought one (using Jason's Apple employee discount of course).

I told him I wanted red. I've always gone for the cute pink or green electronics, but I decided that red is my color right now. It's my main wedding color, it's the color of my lunchbox and tumbler, and it's the color of my purse. I've gotta match, right?

Poor Jason thought he'd done such a good job. He got me the pink nano because he knows I like pink. When I opened it, he realized his mistake, but I told him I'd keep the pink. I do like pink. But he insisted we go up to the Apple Store and exchange it for the red one. My man is so good to me...probably too good.

After the Apple Store, we ran to Target really quickly to buy a wrench. We've (well, he's) been trying to get the pedestals off of our new-to-us washer and dryer since they're too tall for me. We've both lived either on campus or in an apartment for the last five and eight years, so we don't have many tools. I was supposed to bring the one bolt he could get off Sunday night, but I forgot it (oopsies). He ended up finding the right tool anyway, and then we were on our way.

After Target, we headed to our friends' townhouse for Bachelorette night (the TV show, not the pre-wedding party). Last season, Jason was only home for Monday and Tuesday nights, so in order to see a lot of our friends, he partook in Bachelor night. He actually got really into it...well he got really into making fun of it :) This season, he's back full-time, but we've really become accustomed to Monday nights with friends. So last night, we showed up and per the usual, Jason was the only guy.

After The Bachelorette, we went home and went our separate ways. I've been really enjoying going to sleep before 11 p.m.

So...where are we on the checklist? We've got two pictures and we're missing a recipe.

As promised -

Feta Turkey Sliders:
Ingredients
  • 1 pkg. lean ground turkey
  • 1/4 c. feta cheese (I used garlic and herb crumbled feta)
  • 3 tbsp. Parmesan cheese
  • Italian seasoning to taste
  • Garlic powder to taste
Directions
  1. Place all ingredients in a medium size bowl. Mix everything together (I used my hands).
  2. Heat a skillet over medium-high heat.
  3. Spray skillet with nonstick cooking spray.
  4. Form mixture into the size and shape burger you want (my first few were kind of thick, but my last ones were thinner and it was much easier to cook the thinner ones).
  5. Cook until all the way through. There should not be any pink in the middle. Flip them every few minutes.
  6. Sprinkle a little bit of feta cheese on top.
I didn't put mine on buns, but you definitely could! I just ate mine with a little bit of honey BBQ sauce and a sliced orange.

A Picture-sque Weekend

Happy Monday everyone!

I'm actually really sad that the weekend is over. I took a half vacation day on Friday and I literally had the best weekend I've had in months.

Here's the weekend-in-review-via-pictures (I like combining words today):

Friday Jason and I went to see one of my best friends graduate from Samford's nursing school. I am so proud of her and it was also great to see my Little (little sister in Phi Mu)!

After graduation, Jason and I drove to Decatur, AL to see our friends Mark and Lindsay. Lindsay was on the Casting Crowns tour opening for the band while Mark, her husband, was also on the tour as an assistant tour manager. Jason and I became friends with them in the fall and we were excited to get to see Lindsay play at Soul Stock.

The event was sponsored by Show Hope, which is an organization that helps people adopt from overseas by raising money for grants and also raising awareness about orphan care. If you've ready my blog at all...you should know that I was totally excited about going to a Show Hope sponsored event (I cried like three times while we were there).

One of the cool things that is connected with Show Hope is called the Red Bus Project. It's literally a big red bus that goes around to college campuses and it's set up like a thrift store on the inside. It's super awesome and if you ever see this thing, you should definitely check it out!

After Lindsay played, Steven Curtis Chapman's sons played. I'd heard a lot about their band, Caleb, but I'd never seen them live before. They were great and Jason and I had a great time relaxing outside listening to their music.

After Caleb, there was a speaker from Show Hope who talked a lot about adoption and what the organization does. Jason and I listened for a little while, but then we got super hungry so we hit up the booth that was selling Chick-fil-A sandwiches. YUM! Jason also bought us matching-ish Show Hope t-shirts! Thanks Jason!

The headliner for Soul Stock was Steven Curtis Chapman. He and his wife started Show Hope after adopting their three little girls from China about 12 years ago. It was only appropriate that that headlined for the first Show Hope sponsored event, right? I definitely re-lived ages 6-9 since he played a lot of his older music.

I loved everything about the event (except the bugs).

Saturday morning I woke up early, per my usual weekend routine. I waited to get a text from Jason saying that he was awake. We were able to go for a walk and do some work around his apartment and mine. I made us some lunch to save money. I hadn't been to the grocery store yet, so I literally threw together random things for myself, but it ended up being pretty good!

I had Italian seasoned green beans with shrimp and a baked sweet potato on the side.

Later that evening, Jason and I went to Chili's for dinner. I had the chicken fajitas with no sides while he went for the chicken crispers with corn on the cob and fries. We had a coupon for a free molten lava cake (hello splurge day), so we split that for dessert. It was good, but not sure if it was worth the calories (that sounds like crazy talk coming out of my mouth, but it's the truth...my how things have changed). Jason made me promise I'd never tell him how many calories are in that cake.

After Chili's we used another coupon and saw What to Expect when you're Expecting at the Edge Theater. It cost $6 for both of us to see a movie and for Jason to get popcorn. Now that's what I call a cheap date :)

The movie was actually really funny...and surprisingly clean. It has some language in it, but I was pleasantly surprised!

Sunday was the greatest day of all. We didn't do a whole lot, but it was great for some reason! I was actually able to sleep in (which is unusual for me), and then Jason and I went for another walk. After our walk, we made lunch and caught up on some TV shows. After TV/lunch time, we went to the pool for the first time this season (it was Jason's first time ever).

When we walked up to the pool, there was a man laying on a float in a teal speedo. Last year, my mom came up to stay with me on Memorial Day weekend and this same man was in the back of my apartment (I guess his backs up to mine) doing yoga in his chair. Well, yesterday Jason decided that it was too hot  to just sit in the chair, so he got in the pool (Jason, not speedo man...he was already lounging on his float). Speedo man started talking poor Jason's ears off. Turns out...he's from Miami and he's an alligator wrangler.
I couldn't help it. I had to take a picture.
I texted my mom while Jason was talking to the man and she said, "Well, it's official. Jason will literally talk to anyone!" So much truth.

After about an hour at the pool, we had to go back to my apartment to wait on the guy from Charter to come fix my internet...again. After he left, it was time to head to church.

Church was great, dinner was get (yummy yummy Thai food), and then we went to Jason's apartment to work on getting the pedestals off of our new washer and dryer.

They're so dusty, which wasn't a big deal. The pedestal came off of the dryer super easy. But the washer was a whole different story.

After about 45 minutes of trying to get the bolts out, Jason decided we'd go buy a better tool later. Poor guy, in the middle of all of that, he killed at least two spiders (probably more) and had to clean off all kinds of bugs and nasty stuff that we apparently purchased with the washer.

Overall, great weekend. I honestly didn't want it to end. But next week is a long weekend (WHOOHOO!!!) and I'm sure it will be great as well!

Gather 'rounnd...it's Story Time

I feel like I should begin this post with, "Good morning girls and boys," like on Barney & Friends.

However I do have a story for you this lovely Friday morning.

As many of you probably know, my wonderful fiancé is a bit like a cartoon character (or so people say). He is so outgoing and I admire him for his whit, sense of humor, and ability to be 110% himself in every situation.
This is how I envision Jason as a cartoon.
When he see's this, he'll probably say that this dude has cool hair. Just a guess.

But, last night I wanted to crawl into a hole.

One of our friends opened for a band a couple of weeks ago at a venue here in Birmingham called Workplay. She asked one of our other friends to play guitar for her during her set (they lead worship together at church and are on worship staff together). Through that, our friend who plays guitar met the guitarist from the headlining band.

Well, Jason has met that band a couple of times himself and he's done sound for them at events at Samford, so we're both familiar with them (although I'd never met them). Someone saw on their website that they were playing a house show in Birmingham last night, so our friend who plays guitar texted the guitar player of the headlining band to see if it was an open show and if so, could we come. He said yes to both, so last night Jason, our friend who plays guitar, his wife, and me went to the "house show".

When we arrived, there was a sign out front that was in kind of a graffiti font, so none of us could make out what it said. We thought it said, "Best of..." and then Jason told us they were probably being artsy and didn't want anyone to know the last word.

We got about halfway down this driveway and we see a bunch of people...well no...teenagers...out by the pool. Then our friend's wife (who's my friend as well, but I'm trying to only use pronouns) said, "Did that sign say 'Class of 2012'?". Why yes, I think it did.

By that point, we'd already been spotted and one of the parents came out and asked if we were friends of the band. So, instead of saying no and running away quickly and gone to pick up dessert somewhere (which is what I wanted to do), we said yes and went to the party...the high school graduation party.

 Turns out, a most of the students went to a private, Christian school in Birmingham and a large handful of them will be attending Samford in the fall. I considered laying some groundwork for my sister, who will also be a freshman at Samford in the fall, but I decided she probably wouldn't appreciate that. Who wants their older, party-crashing sister finding them a roomie and new BFF?

It ended up being okay. I felt awkward the whole time, but the guys had fun at least. The kids didn't even know we were there and the parents probably thought we were besties with the band...or something.

As we were leaving, we started discussing what the owners of the house must do for a living (the house was beautiful and huge). Turns out...he's in advertising...

...how about that?

We were offed cake but we declined - which is a reflection of how awkward we felt (we, meaning me and the guitar player's wife)

All in all, it was an enjoyable evening, and we ended up taking away a great story.

Meditate and Chew

Ever since last Friday's post about contentment, I've been really focusing and meditating on Psalm 139. I believe that reading it last week revealed so much new truth to me. So, since I didn't cook last night, nor did I really do anything productive (except hang out with friends from college, of course), I figured I'd leave you with something a little more...eternal :)

Psalm 139 -

O Lord, you have searched me and known me!
You know when I sit down and when I rise up;
    you discern my thoughts from afar.
You search out my path and my lying down
    and are acquainted with all my ways.
Even before a word is on my tongue,
    behold, O Lord, you know it altogether.

You hem me in, behind and before,
    and lay your hand upon me.
Such knowledge is too wonderful for me;

[Worry] Warts are Gross


When I was in 4th grade I had to create a business as a school project. Our entire classroom was covered in upside down refrigerator boxes for about a month. I don't remember the name of our business, but I do know that at first our business failed. 

Then, we learned about worry dolls. 

My mom taught my friend and me how to make worry dolls out of clothespins. We made hundreds of them, and they sold so well! In the end, we didn't fail.

Ironically, we didn't fail this project because worry exists in the world. In fact, not only does it exist, it is ever present and prevalent in our lives. 

Last week I introduced you all to the book I'm reading called Calm my Anxious Heart. Well, I'm finally on chapter nine. I took me a day and night to finish chapter eight. Yes, I'm a slow reader, but it took me so long because I truly struggled through the chapter called, "Worry is not a Rocking Chair".

If you've ever taken the Myers Briggs personality test, you'll know what I mean when I say that I'm very much a "J". I'm convinced that this personality trait, plus the fact that I'm a sinner living in fallen world, leaves me with a lot of worry. As Jason says, I'm a "worrier".

This chapter of the book went all military on me (meaning that it broke me down and then eventually it built me back up). When the author, Linda Dillow, did a study on the topic of worry among women, she found that women worry about these things the most:
  • Money
  • Parenting
  • Marriage
  • Health
  • Job security
  • Weight
  • Threats
Here are the reasons why women worry about these things:
  • The world is out of control
  • Families are out of control
  • My life is out of control
Like Linda, I can definitely identity with these women, but for me, this list of reasons begs the question:

Who IS in control?

As I've already stated in a previous post, we know that God is in control.

In the book, Linda places a quote at the beginning of this chapter.

"George Müller said, 'The beginning of anxiety is the end of faith. The beginning of true faith is the end of anxiety.'  All our fret and worry are caused by calculating without God."*

When she wrote, "We say with one breath that we trust God and with the next breath how worried we are! Worry and anxiety give a small thing a big shadow, and this shadow creates problems, not just in the soul and spirit, but in the body,"**

When I read this yesterday, I felt like Linda could see into my filthy, unfaithful heart.

How many of us do this? How many of us sit at church and nod our heads and sing and worship, go to bible study and live out our "good Christian life", but then when we are alone or when one thing doesn't go our way, we freak out and ask God why he's doing this to us? I know that I am so very guilty of this.

I could probably write a book myself just on this topic alone. I could go on and on about how the only thing that God has done for us is send his perfect and holy Son to die on the cross for our sins. I could state that we are all hypocrites and in the middle of circumstances that are less than ideal, we should cling to the cross rather than blame the Sacrifice. I might even would add that if God gave us what we deserve, we probably would be a lot more upset about where we'd all end up.

But, I'm not a preacher. I'm just a girl who writes a blog to share with those of you who read it about what I'm walking through in my life. So, keeping that in mind, I will fall back into line and tell you all that I fail at not being anxious and not worrying each and every day. I fail miserably.

If you feel like you may identify with this, if you, like me, are a chronic worrier, here is some truthes that are so obvious, but sometimes so difficult to truly embrace.
  • Worry doesn’t empty tomorrow of its sorrow, it empties today of its strength.**
  • Perhaps the most striking characteristic of worry is its absolute impotence. Worry never changes a single thing except the worrier.**
  • Worry is definitely counterproductive. Like our earlier illustration of a rocking chair, it doesn’t get us anywhere, but at least it gives us something to do, and women like to do something!***
  • 1 Peter 5: 6-7 gave us an alternative to carrying the anxiety ourselves. "Humble yourselves, therefore, under God’s mighty hand, that he may lift you up in due time. Cast all your anxiety on him because he cares for you."****

May we cling to the truths of scripture.

May we pray without ceasing (1 Thessalonians 5:16-18). May with cast our anxiety on the Lord (1 Peter 5:6-7). May we be strong in Christ and not fear what circumstances come our way (Isaiah 35:3-5).  May we recognize that God has placed us here for a purpose, not just to survive (Matthew 6:25). May we not be anxious about tomorrow (Matthew 6:33-34). May we lift our voices in prayer instead of wasting away our days being anxious and worrying about things that God is sovereign over (Philippians 4:5-7).

Prayer Focus for the Day: May we ask God to lead us to a place where we do not worry and we solely rely upon him for his provision. May we ask him to place people in our lives who can encourage us in this area of worry and anxiety. May we also ask God to place us in others' lives to be someone who is an encouragement to them.

Chicken Biscuits: Not just a Chick-fil-A Thang

Most of you know how delicious a chicken biscuit from Chick-fil-A can be. They're especially good on a cold morning when you're headed to work (or school) and you just need a little pick-me-up to start out your day right.

Well, I love those little things too. But unfortunately that's not what this post is about...

In the Sansom household, we have our own form of chicken biscuits. My mom has been making them for years and when Jason and I started dating, this was one of the first meals I made for him. They've now kind of become a staple in the soon-to-be Morales household.

So, without further a due, here is the easy-as-pie recipe -


Chicken Biscuits - Sansom Style:
Ingredients
  • 1 lb. boneless skinless chicken breasts, diced
  • 1/2 c. BBQ sauce (I use Sonny's Mild & Sweet because it's Jason's fav)
  • 1-2 cans of Pillsbury biscuits
  • Nonstick cooking spray
  • 1/2 c. shredded mozzarella cheese
Directions:
  1. Preheat oven to 400 degrees F. 
  2. Dice and sautéchicken in a skillet. 
  3. While the chicken is sautéing, open the can(s) of biscuits and spray a regular sized muffin pan.
  4. Smash the biscuits until they're pretty flat and lay them in the muffin pan. They shouldn't fill the whole thing, but they should cover the bottom and come up about halfway around the sides. 
  5. Mix in BBQ sauce with sautéed chicken.
  6. Scoop about 4-5 pieces of chicken into the middle of each biscuit in the muffin pan. 
  7. Put in the oven for about 7-8 minutes. 
  8. Pull out of the oven and sprinkle cheese on top. Cook for another 1-3 minutes or until cheese is melted.
Jason's dinner served with a spinach salad and extra BBQ sauce on the side.

The result is delicious! It's cheap, it's easy, and it's super yummy. Jason likes his with extra extra BBQ sauce.

In Case You've Caught the Mondays

Happy Monday everyone!

After two posts on Friday, I decided to take the weekend off from blogging. But don't worry, I have plenty to share today!

I will catch you up on my weekend really quickly (meh, kind of quickly).

Friday, I left work a little early because Jason and I had friends in town.

When I arrived home, a birthday/wedding present was waiting for me.
At first it was a mystery, and then on Saturday my sisters called and told me that the gift was from them! I love it (and so does Jason)!

We took our friends to New York Pizza, which was really fun. Jason and I just hung out for the rest of the evening.

Saturday was a busy day. We started out at the 5K Walk for Foster Care. I took us to the wrong park...oops! But once we got there, we had a great time. The weather was perfect and it was nice to start the day out early.

From there, we attempted to run some errands, but it honestly didn't happen. Everything we needed to do was closed. So...we went to lunch.

We hit up Stix by the Galleria thinking that they had a lunch menu, but they didn't. I got the teriyaki chicken with double veggies and no rice. I'm slowly but surely learning how to spell teriyaki (even though it's showing up as misspelled on my computer right now...uh oh).

Saturday was my sweet little neighbor's 87th birthday. Jason and I bought him a cupcake, card, plant, and balloon and left it for him Saturday morning. I ran into him as I was coming home from the grocery store on Saturday though and he said he didn't have dinner plans.

I was making dinner for Jason and myself, so I took some over to him.

Then...he told Jason that I need to go into the catering business.

Not sure what to think about that!

Anyway, here's what I made for dinner:
Jason's dinner is on top - Ziti Bake - and my sandwich and salad is below.

Once again, Jason and I ate together but separately. His dinner wasn't unhealthy, but I really wanted some frozen yogurt Saturday night, so I decided to use the remainder of the turkey from last week to make a sandwich.

I adapted the recipe for Jason's ziti bake from a recipe I found on Dashing Dish.

Three Cheese Ziti Bake (or, Three Cheese Pasta Bake):
Ingredients
  • 3 c. cooked whole wheat penne pasta
  • 1 c. fresh spinach leaves
  • 1 lb. lean ground turkey
  • 1.5 jars three cheese marinara sauce
  • 2 oz. 1/3 less fat cream cheese, softened 
  • 1 c. shredded mozzarella
  • 1 tsp. basil
  • 1 tsp. oregano 
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/4 c. Parmesan cheese
Directions
  1. Preheat oven to 375. Spray a large casserole dish with non-stick cooking spray. Cook pasta according to package directions.
  2. Meanwhile cook ground turkey in a large nonstick skillet, until meat is cooked through, (no longer pink). Stir in cream cheese, crushed tomatoes, spinach, and spices and turn off heat. When pasta is done, pour into a colander to drain. Add pasta to sauce mixture.
  3. Pour everything into prepared casserole dish, and sprinkle mozzarella over the pasta. Cover casserole dish with foil. Bake for 15 minutes, remove foil, and bake an additional 5-7 minutes, or until mozzarella is melted.
My sandwich consisted of whole wheat bread, an avocado, black forest turkey, and colby jack cheese. I grilled it on the skillet for a few minutes to melt the cheese.

I had a blast cooking Saturday night, as you can see. Usually, I'm alone on Saturday nights, so I either just make something quick for myself or go out to dinner with friends. Have I mentioned lately how much I love having Jason home?!? 

After dinner, Jason and I went to go see The Avengers...finally!! We are huge fans of the Edge Theater in Crestwood. We started going there when Sharing Spree sold tickets for less than $2. We bought tons of them...and unfortunately they're all used up/expired now. We still have coupons and Sharing Spree deals that are $5 for $10 worth of tickets or concessions. So, for two tickets and a popcorn, Jason paid the difference of $2 for us to see an incredible movie!! That's what I call a deal!

I loved everything about Saturday night. The food, the company, the movie, the price...absolutely everything...except for the kid who sat behind us in the movie and coughed, sneezed, and sniffled the ENTIRE 2.5 hour long movie! By the end of it, I felt like I needed to wash my hands for 15 minutes straight...or maybe take a shower.

Sunday was a normal Sunday for me. Jason went back to volunteering at church working the lights during all three services. I taught my 8th grade girls small group. We went home for lunch, ate leftovers, and watched Property Virgins. Then we went to the Summit to look for some colorful jeans for Jessica and we hit up Target on our way back to church. Church was great, our pastor and his wife are pregnant with their 4th child! We're so excited for them!

After church we went to Maki Fresh where I ordered a salmon salad. It was great, but I'm usually not all the way full after eating that. That shouldn't be the case for a salad that costs almost $10 from a counter-service restaurant. Oh well...
After church, Jason and I went home and read. We've never done that before and I'm not sure why. We both enjoy reading. So, we sat on my couch, Jason with book in hand and me with my Kindle. We read for about and hour...and then I fell asleep on the couch. Have I mentioned that Jason and I are glad we're done with school? I don't have the stamina to read like I had to in college anymore!

So, that about sums up my weekend. This morning I got up and went for a run around my apartment complex for about 30 minutes. I saw Jason's Asian next door neighbor doing tai chi or something in the parking lot.

GOAL: Get a picture of that for tomorrow's blog!

A Prayer of Contentment

I know you're thinking, "What?!?!? Two posts in one day? I don't have time for this kind of rambling, Jessica." But I promise that you will not be disappointed. If you never read anything else that I write, please read this post (mostly because it's mostly written by someone else).


I'm reading the book a book called Calm my Anxious Heart by Linda Dillow*. The book was actually recommended to me by a blog reader and friend after I posted the confessions post a few weeks ago. I have thoroughly enjoyed this book thus far (I'm only on chapter three...but I'm a slow reader).


This excerpt of the book is coming from Psalm 139. Take few minutes to read it (by clicking the link) and then read this quote from the book. You will not regret it!

According to Psalm 139, God not only created your personality, He also gave you your body. Verse 15 reads, “My frame was not hidden from Thee, when I was made in secret, and skillfully wrought in the depths of the earth” (NASB).

In Hebrew, the word translated wrought means “embroidered.” It was the same Hebrew word used to refer to the skillful and artistic needlework in the curtains of the Old Testament tabernacle. When God fashioned you in your mother’s womb (described in the psalm as “the depths of the earth”), He embroidered with great skill. Although no one else could see you, God saw every detail of the formation of your body. As a weaver intricately embroiders colors together to create a beautiful pattern, God knit together your veins, muscles, nerves, and every curve and indentation that is uniquely yours. What tapestry can begin to equal the human fabric?

Perhaps you think other female tapestry is beautiful, but not yours. “I don’t like my nose, my hips, my breasts. In fact I really don’t like much about me.” All of us could list things we’d like changed about ourselves. But if we are displeased with our physical form, we’re really arguing with He is responsible for the color of our hair and the size of our nose and whether we have cellulite.

I’m not surprised that so many women struggle over their personal appearance. The values of our American culture are warped. We’re constantly bombarded with pressure created by the media to have a “perfect” body. This emphasis is wrong and unbiblical. As Christian women, we know this perspective is twisted, yet how easy it is to get caught up in the deadly disease of comparison.

My husband, Jody, believes that women look at other women more than men look at women. This may sound strange, but I think he’s right. We women analyze, scrutinize, and compare to see how we stack up to the supermodel in her skimpy bathing suit. I never come out looking very good. When we compare ourselves with others, we’re told we are without understanding. The Living Bible says we are “stupid” (2 Corinthians 10: 12).

Several years ago I read an article by the Reverend James Hufstetler** that put the comparison game in perspective.

You will never really enjoy other people, you will never have stable emotions, you will never lead a life of godly contentment, you will never conquer jealousy and love others as you should until you thank God for making you the way He did.

God wants each of us to praise Him for His workmanship in creating us.

George MacDonald***, the man C. S. Lewis called his mentor, wrote,

I would rather be what God chose to make me than the most glorious creature that I could think of; for to have been thought about, born in God’s thought, and then made by God, is the dearest, grandest, and most precious thing in all thinking.


This is a prayer of contentment.

Who's Ready for the Weekend?

First of all, before we get into my eats of the day and other random activities, I have a slight public service announcement.

As you all know, I'm very passionate about orphan care, adoption, and foster care. May is National Foster Care Month.

This Saturday, May 12th, there will be a 5K walk at Veteran's Park in Hoover. I'll be there taking pictures and just hanging out from 9:30 a.m. until 12:00 p.m. The walk is only $30. Yesterday morning I wasn't super hungry. I just kept with the usual coffee until about 10:00. Then I decided I was getting a bit hungry. I've been waiting for the perfect morning to make "Oats in a Jar" (idea from Itty Bits...I'm telling you, she's my fav).

Oats in a Jar:
Ingredients
  • 2 tbsp. (about) Smucker's Natural Peanut Butter (creamy)
  • 1/2 c. Quaker multigrain hot cereal
  • 1 c. water
  • Sweetener to taste 
Directions
  1. When your peanut butter jar is almost empty (about 2 tbsp. left), set it aside and wait until breakfast.
  2. Pour oats (or hot cereal) in a regular bowl and add water. Heat for 2 minutes or according to the directions given. 
  3. When oats are cooked, add in sweetener to taste. Stir well.
  4. Pour oats directly into peanut butter jar and mix well. 
  5. Let cool and thicken up...and then it's time to enjoy!
Yesterday was quite busy at work (which is why I didn't have time to post this yesterday). It was nice to be super busy though. The pace of the day also carried over into the night. 

When I got home, Jason made himself a little snack-a-roo and I made myself "brinner" (breakfast for dinner). I truly love breakfast foods.

I made eggs (using Egg Beaters egg whites), whole wheat cinnamon and Stevia toast, and a banana/blueberry smoothie.

Here is the smoothie recipe -

Banana/Blueberry Smoothie:
Ingredients
  • 2 ripe bananas
  • 1/2 c. fresh blueberries
  • 1 c. Silk unsweetened vanilla almond milk
  • Ice
Directions
  1. Pour milk into the blender
  2. Cut up banana and add to blender
  3. Pour in blueberries to the blender
  4. Add ice.
  5. Blend well.
After dinner, Jason had to do a video shoot at Samford. I decided to tag along. I know I only graduated a year ago, but I just felt old sitting there surrounded by all of the college students. Oh well...

When we left Samford we headed to meet up with some of my friends from college (it was kind of ironic since we'd just been on campus). One of my friends was in town from Texas to visit her fiance. I was happy to see everyone. Unfortunate, Jason and I both had to be up early this morning, so we were the lame ones who left early. 

I think that about sums up yesterday. Today is Friday...which means splurge day!!!!  I believe my sweet man is taking me on a date tonight :)
